- 2 C raw unsalted almonds
- 2 1/2 pitted Medjool dates
- 1 C unsweetened raw cacao
- 1/4 C walnut pieces, or buckwheat groats for crunch
- 1 t vanilla extract
- 1/2 t cinnamon
- 1/4 t se salt
1-Soak the dates if they are not very soft for about 1h in warm water
2-Place the pitted dates in a food processor and process until you have a very thick paste. If your machine struggles to make a paste, add 1/2 T coconut oil or ghee. Be patient and stop to scrape the sides of the processor when necessary.
3-Ad the cacao, cinnamon, salt, vanilla and process to mix.
4-Add the paste into a bowl and now add the almonds in the processor and ground until you achieve a almond meal consistency.
5-Add now the date paste into the processor and process until you get a very think paste, almost to the point that it makes a big doughy ball.
6-Transfer the dough into a lined cooking sheet or baking pie and add the walnut pieces or buckwheat for crunch. Mix well
7-Press down the dough firmly as even as possible into a brownie shape.
8-Place them in the freezer for at least 1 h. before scoring
9-Score them into brownie squares once they are firm & enjoy!!
*I personally score them all and keep them inside baggies to have them ready to go!
